Thus, yes. I put both the words beets and sweet in the title of this post. Sweet honestly has a place in indistinguishable title from a formula for simmered beets. Pause! I'm not insane. When you cook beets with coconut oil, their sweetness turns out and if there ever was a vegetable that merits the name Vegetable Candy, it's Coconut Oil Roasted Beets.

Simmered beets are the BEST! I didn't understand I preferred beets until I was a grown-up. I'm almost certain the main beets I was filled in as a child were canned beets. In the event that you've just at any point had canned beets, I ask you to give them another attempt.

I can thank my CSA box for acquainting me with beets as a grown-up. Not having any desire to squander the nourishment I was paying for, I began exploring different avenues regarding how to cook them. Lo and view, I found the integrity that is broiled beets.

  • 2 1/2 pounds beets, peeled and diced
  • 2 tablespoons coconut oil, melted
  • 1/2 teaspoon coarse salt

  1. Preheat the oven to 400 degrees.  Spread your diced beets onto a rimmed baking sheet.  Drizzle with coconut oil and toss to evenly coat all the beets.  Add the salt and toss again to coat with the salt.
  2. Roast in the preheated oven 35-45 minutes, until the beets are soft, slightly caramelized, and starting to get crispy.  Cook them shorter for soft and not crispy, longer if you like the crispy edges.  Be careful not to burn, them, though.  Enjoy!
